Best Meatball RecipeNothing can compliment an Authentic Italian dinner better that a glass of fine wine, fresh Italian bread and the perfect meatball. This is an old secret family recipe that we use in our restaurant and we have been told by many that it’s the best meatball recipe ever. It is very popular with our customers and has had slight modification throughout the years to get it just right. The meatballs are served with all of our pasta dinners and are also used in our meatball sandwich. Combine these meatballs with your favorite pasta dish and sauce, and you’ll have a meal the whole family will enjoy.

This recipe will make 4 servings, (approximately 3 meatballs each), plus you’ll have 4 additional servings for guests, or for lunches or to freeze for another meal. The prep time is only a quick 15 minutes plus 10 to 12 minutes of cook time.



  • ¼ cup of minced onions
  • 1 tablespoon of vegetable oil
  • 2 pounds of ground beef (lean)
  • 2 Eggs
  • ¾ cup of bread crumbs
  • ½ cup of whole milk
  • 1/8 teaspoon of salt
  • ½ teaspoon of pepper
  • 2 teaspoons of onion power
  • ½ teaspoon of garlic powder



1. Preheat the oven to 400˚ F. Lightly grease a baking sheet with oil.

2. Add 1 tablespoon of oil & onions to a small skillet. Cook until tender over medium heat, approximately 3 minutes.

3. Mix the remaining ingredients together in bowl then add the onions. Using a large serving spoon mix until blended.

4. Next shape the beef mixture into about a 1 to 2 inch sized meatball and place on a the baking sheet.

5. Finally, bake the meatballs until thoroughly cooked, approximately 10 to 12 minutes.

21 Grams of total fat

7 grams of saturated fat

142 milligrams of cholesterol

224 milligrams of sodium 224

Are Organic Foods Right for You?

organic foodsIt seems that the hot topic anymore is organic. It’s all around us, just walk into a store and you will find organic foods, clothes, pet foods, lawn care supplies, beauty product and even organic baby formula. In fact, the organic-food industry is thriving; around 70% of the people in the U.S. buy organic food on occasion and about 25% buy it on a weekly basis. Why is organic food booming? After all organic food costs practically 50% more than its non-organic counterpart! Quite simply most people opt for the organic product because it’s natural, which means it’s a better choice for us and its better for the environment, but is it? With such a large number of people in our society jumping on the organic bandwagon, I’ve decided to list some of the pros and cons of organic food. After reviewing the list you can decide for yourself if organic is right for you.


Organic Food Pros


  • Organic foods do not contain hydrogenated fat, as compared to the non-organic variety which does. Selecting organic foods can be heart healthy since Hydrogenated fat has been associated with heart disease.
  • Organic foods have a lower level of residues from pesticide since there are only a small number of chemicals permitted in organic food production.
  • A natural diet is fed to the animals raised on organic farms and the animals are provided free-range conditions.
  • There are USDA qualifications that must be met before organic food may be marketed as “organic”.
  • Many people believe that organic food has a better taste or flavor than the non-organic counterpart.



Organic Food Cons


  • Organic foods do not have artificial preservatives so they often have a shorter shelf life than non-organic foods.
  • Organic food usually cost more than non-organic food. Organic food is more costly to produce since the fertilizers and pesticides used on organic produce is about 3 times the cost of traditional fertilizers, plus the natural fertilizers are limited by nature.
  • It is believed that the use of chemicals is forbidden with organic foods. However, organic food production just limits the number of chemicals that can be used.


The main reason many people use organic food is because they believe it’s healthier than consuming the non-organic equivalent. However, there are no conclusive reports that link organic foods and health benefits. In fact, some scientific research indicates that organic foods are no more nutritious or any safer than the non-organic foods produced through conventional means.


Reviewing today’s trends it appears that organic food sales will continue to skyrocket into the foreseeable future. Ultimately, every individual must decide for themselves if going organic is what’s best for their family, their lifestyle, and their wallet. It’s a personal choice when deciding whether you should follow the ‘go organic’ crowd, what you need to remember is that when you’re considering the content of a diet, balance is the key. The proper balance of nutrients may not necessarily come from a completely organic diet. To ensure a healthy diet you need to make sure that you consume foods from the 5 major food groups regardless of whether the foods are organically or non-organically produced.

A Great Restaurant on Tybee Island

Tybee IslandA few months back I decided it was time for a little vacation, so I packed my bags and headed for the sunny beaches of Tybee Island Georgia. For anybody wondering, Tybee is a small island about a 20+ minute ride from the center of Savannah. I decided on Tybee for a couple of reasons. First, our family is fortunate enough to own an ocean front condo on the island that we were able to pick up for a tremendous price at one of Georgia’s monthly tax sales. Second, Tybee has a large selection of restaurants (40+) for such a small island and there are quite a few that I was very anxious to try.


I arrived on the island in the middle of October and the weather couldn’t have been any better. The daytime highs were in the low to mid 80’s, sunny blue skies everyday and there weren’t many tourists on the island. I had my week pretty well planned; relax, swim, surf, paddleboard and visit the islands sites during the day, and visit the local restaurants at night to partake in the cuisine and talk shop with the chefs.


Each restaurant I visited was exceptional, fantastic food, friendly staff and reasonable prices. About midweek I was told I should check out a little place on the north end of the island that was of favorite of the locals. I was warned that the place didn’t look like much from the outside (basically a local dive) and the menu was limited but, the food was exceptional, so I decided I would give it a try.


On Thursday after my daily activities I venture into a small, out of the way restaurant called Huc-A-Poos. Had I not been warned about this restaurant I probably would have never gone inside, but by the end of the night I was glad I did! The restaurant was kind of hard to find, it was nestled among some small local shops and set back away from the main road. The place wasn’t much to look at from the outside and the inside wasn’t very appealing either but, since I was there I decided to order. I was told that they were rated # 1 on the island for their pizza so I ordered 2 slices of pizza and a side salad.


It took about 20 minutes for my order to be prepared and I passed the time listening to a local band that was playing in the bar area. When the waitress brought out my meal I was pleasantly surprised. The portions were huge, the side salad would have been a meal by itself and the 2 slices of pizza were larger than a whole pizza that most restaurants serve. It only took one taste of their food to realize why it was a favorite of the locals, it had to be the best pizza it ever tasted (and I’ve sampled many from around the country). This place was truly a diamond in the rough and even though I wanted to finish the entire meal there was just too much but, I did have enough for lunch the next day.


As with any vacation the time flew by quickly and soon I had to leave this island paradise. However, I did find a new restaurant that I plan to visit at least once each time I return to Tybee. If you ever visit the island stop by Huc-A-Poos and order a slice of their pizza, I guarantee you won’t be disappointed.

The Best Meatloaf Recipe

When I was growing up my mom used to make this delicious meatloaf once a week since it was such a huge hit with our family. The meatloaf was fantastic hot out of the oven but, I think it was even more enjoyable cold the next day. Nothing says comfort food any better that a delicious, moist meatloaf covered with a brown sugar glazing. Surprise your family tonight and serve this meatloaf with a side of some mashed potatoes or egg noodles and you’ll have everyone asking for more. Whether you decide to enjoy this dish hot or cold, I’m sure you’ll agree that it’s the best meatloaf recipe you ever had.

Total Time Required – 55 to 65 Minutes

Preparation - 20 Minutes
Cook Time – 35 to 45 Minutes


Ingredients for Meatloaf:

  • 1 1/2 pounds of ground meat
  • ½ Cup of ketchup
  • 1 Can of tomato sauce
  • ½ Teaspoon of salt
  • ½ Teaspoon of pepper
  • 1/8 Teaspoon of cayenne
  • 2 Eggs (beaten)
  • 1 cup of bread crumbs
  • ¼ Cup of Onion (chopped)
  • 2 Teaspoons of mustard


Ingredients for Topping:

  • ¼ Cup of ketchup
  • ½ Teaspoon of mustard
  • 2 Teaspoons of brown sugar



1. Use a large bowl and combine together all of the meatloaf ingredients except for the ground beef and mix well.

2. Next, add in the ground beef and mix well.

3. Press the mixture into a lightly greased loaf pan.

4. Use a separate bowl and mix the topping ingredients, make sure to mix together well.

5. Pour the topping evenly over the top of the meatloaf.

6. Place the meatloaf in the oven and bake at 400 degrees for 35 to 45 minutes.

7. When done, remove the meatloaf from the oven and drain off any grease.

8. Serve this simple meatloaf hot or cold.
